Forest Fajitas with Guac

Bringing one of the most popular Mexican dishes to the campsite is a no-brainer. The combination of savory steak & guac, with the sweet and spicy peppers, is a flavor combination that can’t be beat on a hike.

For the Fajitas

Ingredients:

  • Skirt Steak 1lb
  • Sweet Peppers
  • Jalapeño Pepper
  • Yellow Onion
  • Cheddar Cheese
  • Tortillas
  • Coconut Oil
  • Olive Oil
  • Salt

 Steps:

  1. Slice the veggies.
  2. Cut the meat into 1/2 inch strips and season with salt and spices.
  3. Put the pot on Solo Stove and add coconut oil.
  4. Fry few pieces of meat at the time.
  5. Put second pot on Solo Stove and add olive oil.
  6. Use high heat to cook all vegetables separately. Toss and stir frequently.
  7. Toast tortilla over an open flame.
  8. Grate some cheese on the tortilla.
  9. Top with veggies, pico and guac.
  10. Enjoy!

For The Guac

Ingredients:

  • 2 Avocados
  • 1 tbsp Sour Cream
  • 2 Stalks of Scallions
  • Small Bunch of Cilantro
  • 3 Cloves Garlic
  • Cumin
  • Salt

Steps:

  1. Slice scallions.
  2. Mince cilantro and garlic.
  3. Mash avocados, add sour cream, salt, cumin. Mix well.
  4. Add scallions, cilantro and garlic into the mixture.
  5. Enjoy!

For The Pico

Ingredients:

  • 4 Tomatoes
  • 1 Corn on the Cob
  • 1/2 Jalapeño Pepper
  • 1/4 Small Red Onion
  • Small Bunch of Cilantro
  • Small Bunch of Chives
  • Pinch of Chili
  • Pinch of Salt
  • Juice of 1/2 of Lime

Steps:

  1. Cut kernels off the cob.
  2. Heat up the pan, add enough oil to cover the bottom and add corn.
  3. Sauté corn for 6-7 minutes, stirring occasionally.
  4. Dice and drain tomatoes.
  5. Mince onion, jalapeño, and cilantro.
  6. Slice chives.
  7. Mix all together in a bowl.
  8. Season with chili, salt, and lime juice.
  9. Enjoy!
