Bringing one of the most popular Mexican dishes to the campsite is a no-brainer. The combination of savory steak & guac, with the sweet and spicy peppers, is a flavor combination that can’t be beat on a hike.
For the Fajitas
Ingredients:
- Skirt Steak 1lb
- Sweet Peppers
- Jalapeño Pepper
- Yellow Onion
- Cheddar Cheese
- Tortillas
- Coconut Oil
- Olive Oil
- Salt
Steps:
- Slice the veggies.
- Cut the meat into 1/2 inch strips and season with salt and spices.
- Put the pot on Solo Stove and add coconut oil.
- Fry few pieces of meat at the time.
- Put second pot on Solo Stove and add olive oil.
- Use high heat to cook all vegetables separately. Toss and stir frequently.
- Toast tortilla over an open flame.
- Grate some cheese on the tortilla.
- Top with veggies, pico and guac.
- Enjoy!
For The Guac
Ingredients:
- 2 Avocados
- 1 tbsp Sour Cream
- 2 Stalks of Scallions
- Small Bunch of Cilantro
- 3 Cloves Garlic
- Cumin
- Salt
Steps:
- Slice scallions.
- Mince cilantro and garlic.
- Mash avocados, add sour cream, salt, cumin. Mix well.
- Add scallions, cilantro and garlic into the mixture.
- Enjoy!
For The Pico
Ingredients:
- 4 Tomatoes
- 1 Corn on the Cob
- 1/2 Jalapeño Pepper
- 1/4 Small Red Onion
- Small Bunch of Cilantro
- Small Bunch of Chives
- Pinch of Chili
- Pinch of Salt
- Juice of 1/2 of Lime
